Miles, I guess you have tried the Ecore Tools to edit ecore models by the means of a diagram-based editor, haven`t you ? It's included in the Eclipse Releases repository, inside the "Modeling" category ( Modeling -> Ecore Tools SDK). Cheers, Adolfo.
