Lynne, I don't know if this is Coolbar or SWT.  Will watch to see if you 
forward this bug.

This is most likely SWT since the behavior does not occur on Win platforms.  
Will investigate and reassign with a test case.

Opened SWT bug [37941] Coolbar setMinimumSize introduces chevrons on Linux.  
Released a workaround from my end in build > 20030521.

Jared, org.eclipse.ui.workbench or the swt plugins (org.eclipse.swt, 
org.eclipse.swt.win32).

Reopening this bug report since SWT has fixed 37941 - remove UI workaround.

The SWT fix works on MacOS X.
