Currently, no editor in Eclipse that I have seen has the ability to undo or redo multiple changes at once.  I talked via nitind about this.  If you look at OpenOffice, MS Office, or MS Visual Studio; you will see that the undo and redo toolbar buttons have a drop down next to them.  If you click that, you will see a series of changes you made.

As you move your mouse down the list, you are selecting the item under the mouse and all those above it.  In many ways, it is like the back/forward button in browsers.  Like browsers, it might be possible to combine them.  (Up for redo, down for undo)

You could also make an exclusive: With most implementations, it is tough to tell how far back you are going.  But if some sort of live preview could be implemented, it would really help.  As you move the mouse over items in the list, users would see that version of the document.

If you make a mockup, let me know.  I'll review it and let you know what I think.

This is not a text specific issue as the general undo support comes from Platform UI.

This bug hasn't had any activity in quite some time. Maybe the problem got resolved, was a duplicate of something else, or became less pressing for some reason - or maybe it's still relevant but just hasn't been looked at yet.

If you have further information on the current state of the bug, please add it. The information can be, for example, that the problem still occurs, that you still want the feature, that more information is needed, or that the bug is (for whatever reason) no longer relevant.
