As a regular use-case I synchronize my workspace and see a bunch of incoming changes. When I choose to update I have no means of reverting this action. 

It would be helpful for me if I could create a patch (for the incoming changes) before updating my workspace.

I haven't tried it myself, but you could compare your synchronized (updated) workspace with a given date (Compare With > Another Branch of Version, Add Date...). If you don't remember when was the last time you sync'ed your workspace, which is quite possible, you can check the date of the oldest incoming change when you switch to Change Sets mode in the Sync view. Using this date might give you a second chance to see what kind of changes you have just downloaded.

I have tried that. Unfortunately you cannot create a patch from the result of the compare-operation, either. To have the ability to create a patch from there would also be very valuable.
--> create patch off incoming changes
--> create patch off a CVS-compare
