There is not currently a way to do this. I could not find an existing Feature Request for this, so you can log one with SWT at https://bugs.eclipse.org/bugs/enter_bug.cgi?product=Platform&bug_severity=enhancement . The only way that I can think of to do this currently is to somehow indicate in the column's image or text. This won't disable the visual effect of a user click, but can imply whether a column is sortable.
