Hi,

The Egit User guide (http://wiki.eclipse.org/EGit/User_Guide) has in section 3 a description for a large lists of taks. Pro Git (http://git-scm.com/book) is a very good book to describes the internal working of git and usage on the command line. The Gerrit tutorials http://gerrit-training.scmforge.com/ have an introduction into Git and exercises shown with Egit. Other documentation (including video tutorials) are listed here: http://git-scm.com/documentation.
