Hi, Im using the 2021-06 Eclipse IDE

I tried installing add-ons to get such a "Create a GIST" feature, but could not for the life of me get it to work.

IntelliJ has that option built in. Eclipse should have that as well. 

For the benefit of those who aren't aware of Gists, a "Create a Gist" in IntelliJ is the option to take all the source files in your project and upload them to github servers as a "mini repository" that can be shared via a URL to that repository. The gist doesn't have any commit info attached to it.

Moving to EGit which provides git integration with Eclipse. It seems that they already provide a GIST connector:
