In the Ecore Editor I see no way to hide a compartment.

I expect to use e.g. the EClass menu to invoke Show/Hide to enable/disable at least property and operation compartments.

That's because we are not using the compartments (as EcoreTools predates their apparition in Sirius)

We have a draft patchset bringing those here: 
https://git.eclipse.org/r/#/c/55419/

In the meantime as a workaround you can either use the "Hide operations" filter (see screenshot) to hide all the operations from a diagram or use CTRL-H with a selection of what you want to hide.
