https://git.eclipse.org/c/egit/egit.git/commit/?id=ca523ac7a67f5f8a39867c306559e232a744685b removed the Gerrit config page from the clone wizard and it is hard to find the exact node (Removes > origin) on which I can call the new configuration wizard.

The comment it says: "The Gerrit configuration will be provided by the appropriate Gerrit extension.". Is this something that the foundation has to add to the Gerrit instance or something I have to install?

Install the Mylyn Gerrit connector [1] which automates this

This is not an option for me and EGit should work fine without that. It used to work before.
