To quickly identify the default value of an EEnum, its default literal could be underlined (+ bold ?) in the diagram.

The "Default Value" property of an EEnum is always the first EEnumLiteral in the list : this is indeed a read-only feature. However after the fix of bug 224585, you should have a way to reorder literals, and then change the default value.
To conclude, it might be redundant to underline the label to insist on its default value in the EEnum element.
