Currently the only documentation that I know of is located on virgo wiki (http://wiki.eclipse.org/Virgo/Test#Virgo_Test_Framework).
I would still recommend looking at the kenel test modules to get a better fill for the usage.

Good place to start looking is virgo kernel web support: http://git.eclipse.org/c/virgo/org.eclipse.virgo.web.git/tree/org.eclipse.virgo.web.test or Snaps: http://git.eclipse.org/c/virgo/org.eclipse.virgo.snaps.git/tree/org.eclipse.virgo.snaps.test.

Hope this helps.  I will try to put together a working example this week with a writeup.  What build tool are you using to run your tests?  Ant, Maven, other?
