This is true, and I do like Alexander's idea of starting with CDT. _But_ it might be possible to ask a few questions which could be addressed flipping a few defaults, and it's even possible that those flips could happen in EPP rather than JDT.

Yep, sometimes it is not only possible, but it may be better/easier to "filp" those settings in EPP. E.g. we've learned in the many discussions on several bug reports that it could be better to change the line number default for text editors in EPP, and not upstream in Platform.
