I've also added EclipseLink (which has been an Eclipse Project since 2007)

Note that I think in terms of projects, not any particular sort of technology. This chart lists the open source projects that we expect to be moved to the Eclipse Foundation. Some of the more stable APIs and RIs will be absorbed by one of these projects (that's currently pending).

Personally, I think that a map of the technologies would be interesting, but I don't have the bandwidth to build and maintain that map.

I am planning to build a dependency graph of the projects to help me understand the relationships. I'll share that when I get it written out.
