We have an application based on Eclipse 4.5 which fails to start with GTK 3.22.30. It's not feasible to downgrade GTK, so I'm looking into upgrading our app to a more recent Eclipse version.

All versions from the last 2 years should work. I do recommend always using the latest as every next version has more fixes. Do you have particular issue?
