If you haven't already seen it, I created  
https://bugs.eclipse.org/bugs/show_bug.cgi?id=91496
when I found out that this was not possible.

AFAIK the only way to do it is to copy-paste large parts of the  
JavaSourceViewerConfiguration and
then with that create a different Java Editor - but that surely is a pain.
