This is a misunderstanding of Mac OSX.
Administrator account is NOT the same as root, and you do not have to be
paranoid about being administrative on an OSX system. So change your normal
user account to have administrator privileges and then reinstall Eclipse.
Unfortunately this is not an option as the decision not to use administrative accounts for normal work is part of my employer's IT rules.
Moreover, from my current understanding of how Eclipse works in a multi-user setting (http://help.eclipse.org/help32/index.jsp?topic=/org.eclipse.platform.doc.isv/reference/misc/multi_user_installs.html), my current setup should be fine as it corresponds to scenario #3 described there.
But most importantly, the problem seems to come from somewhere else. I downloaded a fresh copy of Eclipse (just the basic JDT install with no extras) and installed it privately in my account. It has exactly the same problem. I then created a fresh user account and installed Eclipse there in the same way: it works. So there seems to be something in my user account that prevents Eclipse from working, but I don't have the slightest idea of what that could be!
