There is no Java project creation wizard, there are no Java options
under Windows | Preferences. It's almost as if everything to do with
Java has disappeared from my Eclipse environment.

I cannot find the Java project icon on the toolbar either. I have been
to quite a lot of sites and they are telling me to go to icons and menu
options which I cannot see, it is very frustrating. This was working a
few weeks ago, and now it's as if half of my menu options have gone.

See my response to your other question "Java class creation" - it appears you did not download a package that includes the Java tooling.
