[platform-ui-dev] Enable all our platform.ui examples in the build

Friends of Platform UI,

not sure why, but our platform.ui master pom does only include ~50 of
our example projects. They have been comment out a very long time ago
during the intial work to move to Tycho.

I opened https://bugs.eclipse.org/bugs/show_bug.cgi?id=487723 to
include all working examples in the build to have a better build
validation. Please comment in case you remember why they have been
disabled.
