I think you should take a look at the GEF framework: http://www.eclipse.org/gef/ (if it's just visualization then Zest might already do it).

If you want a full fledged graphical editor, using GEF by itself might be a lot of footwork. There is a more high-level project, combining EMF and GEF: http://www.eclipse.org/modeling/gmp/
Maybe you should take a look at the some of the Beginner Tutorials (e.g. http://wiki.eclipse.org/Graphical_Modeling_Framework/Tutorial/Part_1) if this is the right choice for you.
