The only way I know of to disable a method like PUT, in jetty, is to specify it in a security constraint in your web.xml

Do you have something like this in your web.xml?
  <security-constraint> 
    <web-resource-collection> 
      <web-resource-name>NoPut</web-resource-name> 
      <url-pattern>/*</url-pattern> 
      <http-method>PUT</http-method> 
    </web-resource-collection>   
    <auth-constraint> 
    </auth-constraint> 
  </security-constraint>
