Yes, agreed. The OST just gives it a little more structure...not much but a little. OST ideas could be posted through out the day, or you could even have a special room set asside for it. Lots of OST tends to happen between and during the sessions anyways at the conference.

I think that there certainly can be space for something like this within
the embrace of the Unconference context - such that for example one
could volunteer to host an OST gathering for, say, Using Eclipse for
XML Development as an Unconference session.
