You can't have too much of a good thing...
Jetty has produced new releases, so the following convenience
sites are available:
https://download.eclipse.org/oomph/jetty/release/10.0.17
https://download.eclipse.org/oomph/jetty/release/11.0.17
The Jetty 12 releases are structured a bit differently and are available at this convenience site:
https://download.eclipse.org/tools/orbit/simrel/maven-jetty/release/12.0.1
This was done as part of the following issue:
https://github.com/eclipse-orbit/orbit-simrel/issues/19
Equinox and the Platform have migrated to Jetty 12 with ee8. It appears that this forces things downstream from org.eclipse.equinox.http.jetty to use that too.
The Platform will soon adopt the newly released Jetty 12.0.2 version:

I'll make 12.0.2 available as soon as I see that PR completed. Just look for it here:

I'm not sure the impact of the osgi ee8 layer being missing:
