The selection of the Signed-Off button in the staging view is not persisted. I have to tick it again and again if I commit.

Please introduce the same behavior as for the Changed-ID button.

Change-Id behaviour is based on the knowledge whether a repository is configured for gerrit, therefore this works automatically.

Signed-off has no such automatism. You can enable it workspace wide via the "Committing" preference page. I'm not sure if a repository-based mechanism is needed here.
